BREAKFAST TACOS - Spicey



Soft Tacos for breakfast? This meal can be streeeeeetched to feed an army!


ALL YOU NEED

Potatoes
Flour (or corn) tortillas
Bacon
Eggs
Rotel


Get the bacon frying and dice the potatoes for the deep fryer
After bacon is finished, empty the skillet of grease and dry bacon on paper towel...


Drain a can of Rotel and sauté in the bacon skillet (with a little bit of bacon grease)
Then add about half a dozen eggs to scramble in mixture - season with salt/pepper, and a pinch of Cayenne Pepper if wanting extra spicey.


fried potatoes should be about ready...




Heat Tortilla in a skillet and flip over till both sides are puffing. If using corn, add a little oil to pan and fry corn tortilla on both sides, patting dry.


Fill the taco for a fulfilling breakfast!

Vegetable Beef Soup - quick and easy!



Homemade vegetable beef soup - quick and easy!


Main ingredients:



1 or 2 cans of green beans
1 can of diced tomatoes (or crushed)
4-5 med sized potatoes, peeled and diced
1 large onion chopped
1-2 cups of frozen peas
garlic chopped (or dry minced)
season to taste with salt & pepper


While putting together ingredients, precook a pound of ground beef in skillet and drain. To speed up frozen meat, add to skillet with a cup or two of water and simmer till brown, then drain.


For a quicker meal, this can be cooked stove top in a pot and boiled, but I prefer using a crockpot. Adding ingredients first, I top off with water then turn crockpot on high and that's it!


What's especially great about this dish is that it can be stretched into another meal by adding more green beans, diced tomatoes, and some extra potatoes. This soup is also handy for adding leftovers from other meals (fried potatoes, corn, spinach, etc.)


Serve with crackers or throw together a quick batch of cornbread. Enjoy!
